We tested how long that wonderful hot "bite" (above 70 degrees C) a new cup of coffee has when poured into a porcelain cup. It only lasts for 4 minutes!
Instead of rushing to finish your coffee (and risking a burn) in only 4 minutes, we nearly always end up with half a cup of lukewarm coffee that we force ourselves to finish. Yuck!
The problem is that the porcelain acts as a heat sink, absorbing much of the heat. Try holding a porcelain cup by the body and you'll see what we mean! Look at the graph, and you'll see much of the heat is radiated or absorbed in the first minute.
